Easy Cheesy Chicken Fettuccine Alfredo (Recipe with Sale Items from 4/18-24 Jewel-Osco)

This is a great recipe using only a few ingredients, almost all of which are on sale at Jewel-Osco!

 

If you don’t have a Jewel-Osco, many of the same ingredients may be on sale at store near you! Or you can save the recipe and use when the ingredients are on sale.

 

Benefits: This recipe actually has ALL the food groups (if you’re scratching your head, remember that tomato is a fruit!) It can be made this week with SALE ingredients from Jewel-Osco! The main recipe is around $13 and will easily serve 4-6 people with leftovers likely! Serve more people, or extend this into two meals by adding one or both of the optional sides.

 

 

 

Grocery List:

1 lb Perdue or Jewel Split Chicken Breast (on sale $1.99/lb)

2 Jars Newman’s Own Alfredo Sauce (on sale 2/$4)

1 Package Creamette or Ronzoni Fettuccine (or any shape of pasta you like) (on sale $1)

1 Sargento Shredded Mozzarella Cheese (on sale $2.50)

1-2 Green Peppers (not on sale – maybe $1-2)

1 Can Essentials Everyday Diced Tomatoes (on sale $1) (sale is for 28-29oz and you’ll just need half)

½ lb Vidalia Onion (on sale $.99/lb)

 

Recipe:

1 – Start boiling the water for the pasta right away and add some salt which will flavor the pasta. When it’s boiling (should be near the end of the next step) add the pasta and cook.

2 – Coat pan with olive oil or butter, and add green peppers, onions and chicken (make sure to slice chicken off the bone, then cut these ingredients however you like – you can choose to slice these ingredients into bigger pieces, or chunk them so they are smaller). Season with salt and pepper. Sautee until chicken is fully cooked.

3 – Drain the can of diced tomatoes. You’ll actually only need half the can, or you can add more if you want extra tomatoes. If you can, selected flavored diced tomatoes, such as basic, garlic and oregano, to give it more flavor. Stir and cook for 1-2 minutes.

4 – Add the jars of Alfredo sauce. Stir and cook on low. You’re not trying to boil it, just trying to heat it up and let the flavors come together.

5 – The pasta should be about done by now; drain and return to the pan. Everyone’s stove is different, so if it’s not ready, turn the sauce down low and stir periodically, or turn it off completely when it is nice and hot, then put a cover on it.

6 – Add the sauce to the drained pasta dish and stir.

7 –Add one cup shredded mozzarella cheese into the mixture and stir. Then when you serve, sprinkle the top of the portion with a little extra cheese.

8 – One other option – you can make this meal ahead of time, put it in an oven-safe dish, and reheat it when you’re ready to eat. The final step, when the pasta is reheated, will be to sprinkle with cheese and bake an additional 5 minutes or until melted.
